quick corn tortilla burritos - vegetarian style

I enjoy making this quick healthy dinner when the weather turns warm. Although today it's cold, raining and I think I detect a little snow in that rain. That's our Colorado Spring!

All that's needed is a small fry pan. I use whatever I have on hand for the filling: almost any kind of bean-just smash them a bit if you don't have "refried", leftover rice is great, veggies from last night's stir-fry, a piece of get the idea! There is usually corn tortillas in my freezer. I buy the huge package and split them up into about a dozen or less to freeze.

Gather your filling ingredients (see suggested list below) and chop tomatoes and lettuce (or spinach) for your topping. You may want to add or change the toppings depending on your taste, like green onions or  avocados.

Heat the fry pan over medium/high heat. Add a dab of butter and spread around. Immediately add a corn tortilla, swish around to coat, then flip so the other side is in the butter. Heat until it gets just a bit puffy then flip again. After a minute or almost two, remove from pan to your plate.

Add your fillings and roll up. Corn tortillas are smaller than most flour ones, so I don't wrap the ends.

Pop into microwave, and heat until filling is warm enough for you. Sprinkle with favorite toppings. Enjoy!

Filling:  beans-black, pinto, red
           rice-any, but I use brown
           red or green peppers
           onions, zucchini, yellow squash
           carrots, kale, mushrooms
           cheese-jack, white cheddar

I like love taking photos of flowers. I'm not a photographer, however, with a digital camera and free on-line editing software, I can feel a bit like an "artist" which gives me that "cheap thrill". After my camera is full of images I can't wait to turn them into something just a little different.

no-knead bread experiments = success

Walnut Raisin version

A couple of months ago I posted a fabulous No-Knead Bread recipe by Jim Lahey. Since then I have experimented with his recipe by adding herbs for a slightly different version, which I'll share below. I don't have a photo of this version as I gave most of it away right after it came out of the oven.

I finally managed to snag his very popular book from my local library, of which I can't remember the title, for his Walnut Raisin Bread recipe. I first had a few slices of this bread at a dear friend's house and wanted to eat the whole loaf, but I wouldn't have been a very nice guest.

I'm working on a multi-grain version and will post when I have a combination I like. Jim has a whole wheat version in his book, but it's pretty light on the whole wheat part.

Walnut Raisin Bread

Please see the original recipe post for directions, but replace the ingredients with the following:

3 C. bread flour
1/2 C. raisins
1/2 C. walnuts, chopped
1 1/4 t. salt
3/4 t. cinnamon
1/2 t. yeast
pinch of pepper
1 1/2 C. water (maybe a bit more)

Add EVERYTHING in the same bowl in the first step.

Note: I didn't have any walnuts the first time, so I used pecans. I also used golden raisins since that's what I had, and it was a terrific combo! Oh, and I replaced one cup of the bread flour with one cup of whole wheat pastry flour. Otherwise it's the same. :-)

Wonderful toasted!!

Lemon Herb Bread 
(That's what I decided to call it)

Use ALL of the ingredients as usual in the original recipe .

ADD TO FLOUR: 1 1/2 teaspoon dried lemon peel
                          1/2 teaspoon rosemary, french cut
                          1/2 teaspoon dill seed
                          a few twists of black pepper

These loaves make great hostess gifts or as a potluck item. If you are baking for one or even two, cut loaf in half and freeze the second part.


simple breakfast salad

Gather all your fresh fruit for this basic simple dish. I usually chop things like an apple, pear, banana, and strawberries. Then toss in blueberries or grapes. Stir in enough yogurt to coat. I had Greek yogurt this time, but just plain or vanilla yogurt is great too. Lastly, add a handful of chopped walnuts and a dash of cinnamon. 

Nice with a slice of whole grain toast. Yum!
